ZUCCHINI ROLLS FILLED WITH MINCED TURKEY MEAT

Rolls:

2 medium sized zucchini

700 g minced turkey meat

1 egg

2 cloves of garlic

1 handful of fresh basil

4 tablespoons breadcrumbs

50 g of bacon

150g mozzarella

salt pepper

 

Sauce:

1 onion

2 cloves of garlic

2 tablespoons puree

400 g sliced ​​tomatoes

1 handful of fresh basil

salt, pepper, sugar

50 g of parmesan cheese

1 tablespoon olive oil

METHOD

  • Cut the zucchini into long, thin slices using a mandolin or a sharp knife. Salt on both sides and let sweat for 20 minutes. Then wipe off the excess water with a kitchen towel.
  • Preheat the oven to 190 ° C.
  • Put minced meat, eggs, crushed garlic, coarsely chopped basil, breadcrumbs and diced bacon and mozzarella in a large bowl. Season with salt, pepper and mix well. 
  • Make a small rolling pin out of the meat and carefully wrap it in a slice of zucchini. Place the rolls created in this way in a baking dish.
  • Clean the onion and garlic and cut into small cubes. Heat the pan with oil and fry in a glassy onion and add the garlic. Roast for a while and then stir in the puree, sliced ​​tomatoes and chopped basil. Season with salt, pepper and sugar, remove from the heat.
  • Pour the tomato sauce into a baking dish next to the rolls and cover with grated Parmesan cheese.
  • Put in a hot oven and bake until golden for 35-40 minutes.
